Historically, Italian food has been influenced by class structures as well as geographic locale. We intend to combine
the best of the Cucina Povera, the traditional peasant or working class fare, and the Cucina Alto-bohrghese the
preparation of the cooks of the landed and merchant families. The Cucina Povera utilized local produce, hunted animals and harvests
from the sea. The Cucina Alto-borghese made use of these bounties as well, but diversified them with their added
knowledge of cuisine from other lands.
Some of what we present to you are the recipes that have
been traditions for hundreds of years. Many of these originated in Carini, Palermo. It is our goal to retain the
dignity of the Italian classics while at the same time offer modern interpretations. We can only accomplish this by using the finest
ingredients. With this in mind, we offer our new menu, one we hope you will enjoy. In doing so, we understand many
of our friends have developed preferences for items no longer printed on our pages. Requests for these dishes will be
accommodated when ingredients are available.
Almost as important as the food, and more to some, is
the wine. For this reason, we have selected several vintages to complement our fare, antipasti to dolce. Please
feel comfortable in asking your server for recommendations. Italian cuisine often consists of ingredients unfamiliar to some of our
guests. Again, please do not hesitate to ask your server about preparation concerns.
